In the last couple months of my blogging hiatus, I have learned two very important things: I love Indian tea and I am even more in love with Brun-Uusto (Finnish-style baked cheese)- a version of Juustalepia or ?bread cheese?.

Indian Tea: Growing up, I was lucky to have been exposed to Indian food- given a few of my best friends are Indian. But I never really understood Indian?tea until very recently. It was a Wednesday. Yet another cold and rainy day in Chicago.

To get to my office every morning I usually have to pass through the cafeteria. One of my favorite doctors was heating up a mug of some concoction in intervals. ?Americanized Indian tea?, he called it. Moments later I found myself eager to learn how to make it, and was microwaving my own mug of it in minutes. It was like Christmas (in India) in a cup. A flawless alternative to my usual cup o? Joe and a great way to up your milk consumption.
Americanized Indian Tea
8 ounces skim milk
3 LIPTON Black Tea bags
Place all three tea bags in a mug. Pour cold skim milk directly over the tea bags and fill mug to desired level. Place mug into the microwave for 45 seconds. Remove mug from microwave and dip tea bags a couple times and leave in the mug. Repeat after 30 seconds, and 15 seconds. (You obviously can choose the heat up time to your own liking, I?m just following the recipe as ordered by my doctor!)
Brun-Uusto: You know that texture of toasted bread blanked by melted butter? It?s like that. It feels like that on your tongue. I first discovered?Brun-Uusto?in the comfort of my actress-friend?s home last summer. Enter Dana, my outgoing Jordanian friend who doesn?t really cook, but makes a?mean rice pilaf and is the one-and-only who introduced me to this exquisite treat. I like to cut up 1-2 ounces in cubes, grill them on a nonstick pan until golden brown and eat with strawberry jam- makes a terrific, after-work snack! ?It will leave you?crying for more. I particularly enjoyed Brunkow Cheese of Wisconsin?s Brun-Uusto which I picked up at my local, organic grocery store. ?(You can see Dana live at the Marriot Lincolnshire in the comedic opera/musical: ?The Pirates of Penzance?!)
